In May of 2009, after two years of development, Chef Guard opened TAG on Larimer Square in the bustling LoDo District of downtown Denver. Two years later in 2011, Chef Guard and his team opened a second restaurant, TAG RAW BAR, a concept the chef describes as the manipulation of the freshest seasonal ingredients, serving innovative and personalized bowls, sushi and sashimi. In December of 2011, it is one of Westword’s “Denver’s 10 Best New Restaurants of 2011”. Troy visited the Skuna Bay farms in May, 2012 and we are now proud to add his prominent name to our Family of Chefs.
