Chef Rossi attended the prestigious California Culinary Academy in San Francisco, where he graduated at the top of his class and where he was honored with the coveted Danielle Carlisle Walker Award as “Most Likely to Succeed.” He then traveled to the island of Maui with an internship with pioneering chefs Roy Yamaguchi & David Abella of the highly successful Roy’s Restaurant’s. Chef Rossi then returned home to California to work with the Food Network’s "Two Hot Tamales", Susan Fenniger and Mary Sue Milliken at Santa Monica's Border Grill.
From there Chef Rossi embarked on a journey to the world famous Italian Culinary Institute for Foreigners in Costigliole d’Asti, Italy and then worked in one of southern Italy’s finest restaurants at Michelin starred restaurant, Il Principe in Pompeii then in Bologna to work alongside one of Italy's greatest chef's, Bruno Barbieri at the Michelin 2-star restaurant, Locanda Solarola.
Upon returning home from Italy, Rossi opened Disney’s® Award-Winning Napa Rose Restaurant with Executive Chef, Andrew Sutton and then Master Sommelier and General Manager, Michael Jordan. He went on to the Five-Star Ambrosia Restaurant where he became Executive Chef and finally to his current home, where he is Executive Chef at THE RANCH Restaurant & Saloon. In 2006 Chef Michael was recognized as one of Orange County’s ‘Young Guns’, a magazine cover feature Orange County’s ‘Top Ten Chef’s Under 40’, by OC Metro Magazine 2006 and in 2007 as one of five Chefs in America to be inducted into the Fraternity of the Côtes of Bordeaux Wine Council, Bordeaux, France in collaboration with the Jean-Louis Palladin Foundation in Washington D.C. 2007
