Joshua Luce started his cooking career at the French Culinary Institute in NYC learning the building blocks of cuisine from legendary celebrity chef Jacques Pepin. After several years of working through intense kitchens ran by the likes of Craig Koketsu, Terrance Brennan, and the iconic Jean-Georges Vongerichten; a deep understanding of Michelin-rated restaurant operations had solidified. Next, a rare opportunity came to join the kitchen brigade at the Alain Ducasse outpost in the Forbes five-star St. Regis Hotel. It was here that Joshua had the great privilege to work alongside the passionate chef Didier Elena who continues to be a source of inspiration and mentorship to this day.
Returning to his native California with incredible experience, Joshua landed the opportunity to run the AAA five-diamond restaurant inside the Peninsula Hotel in Beverly Hills. Following this, he also held a position as the executive sous chef at the boutique Ace Hotel in downtown Los Angeles where he again oversaw a hotel restaurant operation. Now with over a decade in the top echelon of the industry, Joshua jumped at the chance to open Neighbor in Venice Beach as the executive chef and partner.
Throughout this ongoing cooking process, Joshua's mission statement as a chef has remained consistent and simple: "I've always stayed focused on delivering the best possible culinary experience through a combination of well studied technique and outstanding quality product."
